...there was easy access to local, seasonal,
unprocessed food in every town in the U.S.
There was someone at home managing the
family food, usually mom, and she had decent
cooking skills, which she probably learned from
her mom. Most families enjoyed tasty meals
every day and were in pretty good health.
Families got busier and many moms left the house
and went to work. There was more $$, but less time for food prep and passing on cooking skills.
...and wanted their food to taste good, so we all
went on the hunt for meals and snacks that were
both yummy and convenient. Chain restaurants,
Big Farm and Big Food companies replaced
most of the clean foods with super-salty-sweet,
prepared, processed and packaged fast foods.
We ate more and more of these foods
until our health began to suffer
Today in the U.S.:

popping up every day and organic, pastured and
wild-caught food is more and more widely available.
But whole foods take time to prepare and cooking skills to make them taste good. The average amount of time we spend cooking all three meals has shrunk to just 20 minutes a day. And many of us have no idea what to do in the kitchen anymore.
